[IDEA] a pirate's life...
could someone make a mod where you start in a scout-class pirate ship (like FotF) with a teleporter, and, when you kill an enemy crew, you have the choice to take their ship? i think that would be quite cool, but several mods might might have to be merged like infinite space and FotF.

We can't - can not - switch out a player's ship in the middle of a game. We can unlock ships based on just about anything, though. As a matter of fact, we can unlock a ship after a battle, but only if you win by destroying the crew; it's actually pretty trivial to do.
It's difficult to make that work in a mod, though. First of all, you can only ever unlock a ship once. Second, you need to add that bit of code to every single encounter with that type of ship, if you want things to be consistent. Third, there's no indication to the player that you get something special if you board (which can be confusing). I think that's why modders have stuck with the "special event" approach for unlocks.

oh well, its a nice idea, maybe the devs will come up with a way to make FTL slightly more mod friendly <hin_hint>(add new ships rather than having to replace current ones, menu tabs so you can play total conversion mods witout having to replace vanilla FTL etc.)</hint_hint>
